2010 -- mango snowball  Ala carte menu first time we learned how to cook with liquid nitrogen, we were 6 people in the kitchen that time  Only two of us could make this and if one of us wasn't working then it was pain in the ass.. it bacame so popular and Was in our alacarte menu till 2012 that I had to limit in its initial days with 10 plates per day  Many guest would book the desert before reserving a table !! It was such a simple dessert with Mango cream and white chocolate although the technique was very difficult haven't made this for almost 3 years will probably post a video soon how to do it !!
