Quintonil de Jorge Vallejo. La simplicidad en la decoración del local ubicado en Newton, en el corazón de polanco, contrasta drásticamente con la complejidad en las técnicas empleadas en la creación de los platillos. Utilizando ingredientes mexicanos de altísima calidad, el lugar que lleva ya un par de años en la lista de los 50 del mundo, cuenta con un staff atento y conocedor de su carta. Cada uno de los 11 platos del menú de degustación cumple cabalmente con las espectativas y genera explosiones de textura y sabores en cada bocado, que con nostalgia llevas a la boca. Las estrellas de la noche fueron la tartara de aguacate tatemado con escamoles y quelites y el vuelve a la vida de callo, que resalta en el centro del plato una lengua de res marinada con azúcar mascabado y cocinada a baja temperatura durante más de un día. highlights from the longest meal of my life:  1. a superior tomatillo salsa with guajillo, serrano, and the most perfect char throughout 2. cactus ceviche with coriander oil 3. clam encircling beef tongue  4. octopus gelatin disc pinning down an herb cream sauce speckled with chili oil  5. sweetbread taco with perfect piloncillo glaze 6. guava white chocolate rocks (basically high class dippin’ dots) shot through with bright sharp pink pepper, and one of the best desserts I’ve ever had  7. charred corn ice cream and pudding anchored by a crystallized sugar wafer

Vegetables and greens take centre stage at Quintonil (the name refers to a Mexican herb), with plenty picked and served from their nearby garden.
