Perhaps you wonder, so which is better? Dining at Alain's garden or at Restaurant Arpège? Not trying to be politically coffect, I will say, they are simply, different. _ I told my friends with this analogy. It's going the top sushiya (Arpège) vs eating seafood on the fishing boat right when the seafood are caught (the garden when vegetables , fruits and herbs were just picked and cooked / prepared right away) _ Removing the complicated fish-aging part, you know what you get at the top sushiya would be the highest quality fish and shellfish. The whole kitchen are trained and the chef are highly skilled, they can prepare elaborately even if some techniques are time and labor intensive. Dishes turn out in intricate presentation and details. Like this rhubarb tart made at the restaurant, more elaborated than the one we had at the garden.  It is a more holistic view of a restaurant as a whole. That's like Arpège. _ When you eat at the sea on the fishing boat, the focus becomes the ingredients. The freshness of the ingredients. Even both use the same premium ingredients, it's hard to match when you eat at the sea when the sea water is all retained, the seafood had all the juice still inside their bodies; you can even smell the salinity of the ocean water and algae. Just like we can smell the sweet nectar of strawberries, the pepperiness / earthiness/ grassiness / spiciness of different herbs and the floral aroma of the flowers. _ The garden does have the added fun of being casual and watching Chef Alain cooking / roasting / carving meat and fish.  _ For me, one cannot replace the other experience. Heading back now after a very special couple of days in Paris. I will try next week to get a proper review up of both Arpege and Le Cinq, two very different expressions of that most French concept of the 3 Michelin star restaurant. They would never never want to skip the mignardises @ Arpège because these are some of the most delicious and unique small treats you can get. _ The caramelized crisps and palmiers spiced with herbs, the macaron with vegetable / fruit cream and the crispiest caramelized sugar top; cream of tomato on puff, pate de fruit, caramel. Every bite, heavenly, the best ending you could ask for for a long french meal. _ We started at 1pm and ended at 5:15pm. Would have been longer but we actually had to head to the final OAD event, the announcement of the top European restaurants, with Chef Alain together! Mille feuille of apple marron and caramel _  @ L'Arpege, Paris (8th visit, 10.28.2016)  _ If you have tried mille feuille, you will probably know, their mille feuille is the ultimate mille feuille that ends all mille feuille. Each layer was so crisp and "fresh", and flavorful as-is. This was cut in half with one hand and the cut stayed so clean. The flavor of October? Apple, and Marron!!! And Caramel!!! The chou a la crème I posted earlier, as you can see, was  entirely filled with hazelnut cream, and the most amazing part was the texture of the choux pastry. Crispy, warm, not a bit dry or soggy.
