We able to grab an upstairs table at Casa Urola before their annual vacation. Tremendous refined Basque cuisine located above a pinxtos bar. Every dish was a celebration of a local product - super elevated but completely real. These hake chins (fatty jowls) were sublime - ethereal and melting. This is obvious- but there is only one chin per fish - so it was the equivalent of a dozen fish on the plate. I’ll probably never have a chance to eat these again. I loved them.
Did I say no more wine? But this is #muga - prolly the best known Rioja wine. Crianza as it is, it’s more complex than the reserva I had. Cherry, chocolate and bacon notes exploded on my palate and the #pintxos from #casaurola just made the night perfect
