@hiroyasu_kawate san and Nakamura san sending us out after the dinner. I thoroughly enjoyed my meal at Florilege this time. From food, my juice pairing, and hospitality, there was really nothing I didn't enjoy at all. In fact, I think this was my best meal at Florilege. I think the team had really landed at the spot where they are the most comfortable and strong at, and very clear on their direction and identity. _ At the beginning when they first moved here, a lot of experimental dishes and drinks were in development, but now these results had been fine-tuned and elevated, and the dinner still filled with creativity and excitement. I am so happy, so happy for this team. _ From the old location to this new one, Florilege, like their juice pairing I mentioned in the previous post, had come a long way. Weeks later, I find myself still dreaming about this umami 💣. Slivers of cheese, and shiitake layered like lasagna atop a dollop of soft chawanmushi. It is also luxuriously garnished with an generous portion of black truffle. This dish is finished table-side with shiitake broth to guarantee maximum umami punch! 오랜만에 난쟁이를 만났다. 뽀글뽀글을 먹고 싶다하여 한잔 시켜줬더니 한모금을 마시고는 눈주위에 교과서적인 Heliotrope Rash가 생겼다. 신기했다. 추후 비교를 위해 Photo-check를 하고 싶었지만 성격이 포악한 난쟁이에게 제지당했다. 타병원 내과에 근무 중인 난쟁이는 매일 힘들다고 하여 퇴근은 하냐고 물었더니 오후 2시에 집에 갔다고 했다. 순간 볼에 Malar Rash를 만들어주고픈 충동에 사로잡혔다. 이내 진정한 나는 오랜만에 키작은 친구를 만난 반가움에 오늘은 내가 사겠다고 하며 계산서를 달라고 했다. 계산서를 받은 순간 두눈을 의심했다. 0하나가 실수로 붙은 것 같아 말씀을 드렸으나 말없이 미소를 지으셨다. 이번 한달은 강제 라마단 기간이 될 것 같다. 신난다. #청담#압구정#정식당#jungsik#미슐랭#michelin#onestar#asia50best#asia50bestrestaurants2017#no25
