At Gaggan you will notice that each dish being served has a minimalistic approach. Chef adopted minimalism which he described is very difficult to achieve in food. The dishes are not plated with any additional garnishes or sauces however that is no indication that they are not working hard enough to create something special! Take, for example, the next small bite we were presented which was a petit eggplant cookie. Chef described the extensive process that went into making them starting with cooking the eggplants in a tandoor, blast freezing their pulp, and freeze drying thereafter. The remaining cloud of eggplant was then pound into a powder, bound with starch and spice with onion chutney jam sandwiched in between. Chef told us the cookie we were eating takes at least 8-10 chefs over a period of at least 5 days but only 5 seconds to eat! But they were some of the most enjoyable 5 seconds with a preparation of eggplant that was so concentrated and full of intense flavour! 🍆 - - - The following dish made us feel like we were in the holiday season as we were presented with a red and white candy called the chocolate chilli bonbon. The bonbon was based on a classic Indian dish however the flavours are so strong, Gaggan took the essence of it and made it more palatable.
