Roughin' it like a French peasant. Potatoes a la Dauphinoise/Scalloped Potatoes. I do wonder if the French Revolution would have seen a more humane application of revolt without the guillotine, if Robesierre had eaten a meal or two with the very peasants he was fighting to liberate from absolute monarchy and the feudal system? I know, I know, the peasants were starving and couldn't exactly put out a spread for anyone, but it could have been a spiritual game changer. I read the Social Contract, I'm a woman of the people, however, being a woman, I will always find a neater, tidier way to destroy my enemies: make them fat and lethargic with cream and butter, of course. I joke. Maybe not. The golden brown crust of aged cheddar and parmesan cheese has sadly curtained the layout of whole sliced potatoes, arranged like fallen domino tiles. Damn you, cheesy siren of salt crusted promises! Why did I liberally bomb the potatoes like a WWII kamakaze pilot?? I have unintentionally veiled the slow and irritating labour of keeping each slice in familial togetherness, in the original potato shape, succeeding in obliterating my modern tribute to August Escoffier's version of one of the most wonderful dishes, which transcends its humble peasant origins. Some claim the original version, made on the farmsteads, didn't have cheese, but in both recipes I've found in The Escoffier and my Larousse Gastronomique, the recipes call for Gruyère and egg. I think Gruyère is ok, but I LOVE cheddar, thus came the deviation from the beloved original, but no less delicious, I can promise you that. Upon first shovel into his enormous pie hole, the husband chirped up and said "these Scalloped Potato ROCK!" Before he had a chance to finish the serving he was given, he was already running to the kitchen for seconds! Monday deliciousness: house-made whole wheat bucatini, mini meatballs, tomato, Parmigiano-Reggiano, garlic focaccia. These mini meatballs are made with grass-fed beef, ground in house with breadcrumbs, milk & cream, eggs, garlic, oregano and hot pepper. Our popular antipasti meatballs are made the same, but with pastured-raised pork, butchered and also ground in house. 💫
Remember those sweet potato sopes ?✨❤️ This is what I made with them I topped them with tasty refried cilantro beans with a dash of satsuma juice 👌, melted cheddar and a beautiful chorizo and shallot salsa 💃🏻 so good , and the perfect way to begin any holiday party 🎉 If you missed how to make sopes I'll be posting it again on my stories.
