Do yourself a favor and make some scones to go with your coffee! 🙌🏼 ••• Preheat your oven to 375. Combine 2 cups of gluten free 1-1 flour (I use Namaste) with 1/2 cup gluten free oats (I use Bob’s Red Mill), 3/4 tsp baking soda, 3/4 tsp baking powder, and 6 tablespoons of sugar. Add 10 tablespoons of COLD butter, cut into cubes and mix until it’s incorporated into the flour mixture. Add 1/2 cup of dried cranberries. Slowly add buttermilk (or regular milk with a cap full of apple cider vinegar), until the dough combines (depending on the type of flour and humidity, you’ll need about a 1/2 cup). Once the dough is combined, lightly flour your work space and work the dough into about an 8 inch circle. If your dough is too wet, sprinkle more flour on top to make it easier to work with. Cut your dough into 8 triangular pieces, and place on a parchment paper-lined cookie sheet. Brush the tops of the scones with leftover milk, then sprinkle the tops with sugar to create a delicious, sparkly crust! A few weeks ago was feeding tube awareness week. After having been through using a feeding tube and being completely unable to eat or drink, I see the ability to eat as a huge blessing and privilege! I say we should have some sort of ability-to-eat-appreciation-day. Shoutout to @aubreys.lyme.journey who had her MALS surgery today. Same liberating surgery I had that lead me to eat this entire pizza lol.
