Bandon Oregon is a center of cranberry production. More than 100 growers harvest about 1,600 acres around Bandon, raising 95 percent of Oregon's cranberries, and about 5 percent of the national crop. Production averages about 30 million pounds of berries. Katherine and I stumbled upon this view straight from an @oceanspray commercial while exploring the area around Bandon. 🌱Roasted Green Beans with Cranberries & Almonds🌱 Ingredients: 2 pounds fresh green beans, stem ends trimmed 4 cloves garlic, peeled & sliced into quarters 2 Tablespoons extra virgin olive oil 1 1/4 teaspoons kosher salt 1/2 teaspoon freshly ground black pepper 1/4 teaspoon Stevia 1 teaspoon lemon zest, from one lemon 2 teaspoons lemon juice, from one lemon 1/2 cup fruit juice sweetened dried cranberries 1/2 cup slivered almonds, toasted, if desired* Directions: 1. Preheat the oven to 450 degrees F. Line a rimmed baking sheet with heavy duty aluminum foil. 2. Toss the green beans with the garlic, olive oil, salt, pepper & sugar directly on the prepared baking sheet. Roast the beans for 15 minutes, & then stir with a spatula to promote even cooking. 3. Continue roasting until the beans are tender, slightly browned, & just starting to shrivel, about 10 minutes more. Add the lemon zest, lemon juice, cranberries, & almonds, & toss well. Taste & adjust seasoning with salt, pepper, & more lemon juice if desired. *Note: To toast the almonds, bake them on a sheet pan in a 350 degree oven until fragrant, about 10 minutes.
