I hate when I find food pics on my phone and have no idea what it actually is.... Found this photo and it’s obviously spaghetti and meatballs, but the sauce...???? Here’s what I ASSUME happened the night this was made: I looked in the fridge for vegetables for dinner and there were things like - half an eggplant, a head of broccoli starting to looks sad, a zucchini or two, some soft tomatoes, wilting cauliflower, a sweet potato - you get the vibe. It wasn’t pretty and things needed to be used ASAP. So I would have started cooking some garlic and onion in olive oil - if I had a piece or two of good bacon then I’d have added that. Then chopped up the veggies roughly and added them to the pan and cooked them for a few minutes. My usual additions to make a delicious sauce include: Passata or tinned tomatoes Tomato paste A tbls or two of Tamari Some broth if I have it lying around Italian herbs or fresh basil When they are added to the pan it needs to cook off for a while until all the veggies are super soft. Then using whichever contraption you have to purée food - go ahead and use that until it’s a lovely smooth consistency. Makes a great pasta sauce, a great pizza topping or even a tomato sauce substitute. (If you have a Thermomix you can do all these steps in there - when you add the veggies just chop them up at speed 5-6 so the pieces are nice and small.) Anyone else a fan of the random veggie sauce?
