Home early today! So naturally I need to cook a solid dinner! . . Decided to use the last of my beets for another batch of risotto, herb roasted chicken breast and a bit of cashew pesto! GUYS, DO YOURSELVES A FAVOUR AND BRINE YOUR CHICKEN! 8 cups warm water and 1/4 cup of kosher salt, whatever aromatics you want. Pop it in the fridge for even an hour or 2 (no more for breasts) and you will have infinitely juicier, more tender results! Even 15 minutes helps for these little guys! . . Quick salad to go along with it. I was too lazy too actually make dressing, so a little @theoskouzina Tzatziki had to work in a pinch! Little feta to top it off!
