The next dish was a shrimp cocktail with sweet shrimps from Hokkaido. In the R&D lab, Chef Gaggan and his team dissected the shrimps, tasted each of their parts and found the head was the most flavourful. The ‘cocktail sauce’ was a Tom Yum cream which filled the head of the shrimp, like an ice cream cone! The shrimp head was crisp and rich with flavour while the Tom Yum had delicious notes of lemongrass, coconut, and galangal with hints of spice 🍤 The dish following was depicted by a flower emoji 🌼 otherwise known as ‘flower power’ which was served with a brief and informative history on the origins of frying (evidence is that rice flour and frying are very Indian!) About a month ago Chef Gaggan came up with a new idea to turn a song into a dish. The inspirational song was the 1983 Kiss classic ‘Lick It Up’ which played in the background as we picked up our plates and licked them clean! The components were sweet, spicy, sour, and salty which were all placed according to how we would taste them when our tongues hit the plate. A journey into the thrilling world of Gaggan where emojis become reality and the limits of dining as you know it are tested. Our evening began seated around the chef’s table which doubles as an R&D lab during the day. The restaurant itself is a multicultural space with staff coming from all over the world to learn, create, and share under the tutelage of Chef Gaggan, in an open-environment that is educational but also clearly very fun! The emoji menu set the stage for the night with 25 courses of which 22 were meant to be eaten without utensils. The concept of the emoji menu came to Chef during a long haul flight which has now undoubtedly become one of the most recognized menus in the world! The first small plate was depicted by an emoji of a watermelon 🍉 which was an edible oyster shell with pink elderflower from England paired with sugar syrup, and a combination of watermelon, shisho, and elderflower with salt and spice. It was a mix of sweet, salty, sour, and spicy in a single bite, something that Chef said is commonly found in street food in India, particularly with fruits. The second small plate was signified by an emoji of an explosion 💥 which was truly a dish that needed no introduction! The yogurt explosion utilizes spherefication with the traditionally meaningful ingredient of yogurt. Chef described it as the spoon that changed his life, his country’s identity, and the way people look at India.
