I'm posting this tonight because I need this reminder myself and maybe some of you out there do as well. I'm going through a big life transition with moving to a new state , beginning a Dietetic internship soon, and dealing with health issues. It's a lot of change to take in and for someone like me who needs a routine and to be in my comfort zone to be in control change is hard for me to adjust to. I know this is something I've wanted to do for a long time, but when it starts to become a reality it can be overwhelming. The important thing is everything works out one way or another and I just need to breathe.. so if you are struggling with whatever it may be in your own life know that it's okay to take a step back and just breathe things happen all the time, but in the end it works out.. #thursdaythought

Asian cultures have enjoyed the health benefits of soy for centuries.  The difference between the healthy soy they eat and the soy grown in the US comes down to fermentation and genetic modification... Fermented soy is good and healthy, unfermented soy can be downright dangerous! 94% of all soy grown in the US is genetically modified...meaning it's bred to withstand herbicides. Herbicide tolerant...won't die when doused with chemicals...seeds engineered by the same companies who make the herbicides...genius really....I digress... . Happy freakin' Friday lovelies! If you've been watching my stories you would know I've been extremely busy these last few days. Being back at work full time has been a struggle in itself, let alone having early mornings and late nights full of appointments and events. Please be don't be fooled, I am EXHAUSTED, my joints are aching and I have severe rectal pain BUT I have a healthy mind. Many people have asked how I'm doing it and it's all due to my mantra; mind over matter, if you believe you can do it, you can. We have all heard by now that we should "eat the rainbow," but why? βž– Consuming a diet rich in vegetables and fruits provides fiber, diversity, nutrient density, and beneficial phytochemicals which are essential for optimal health. These bioactive phytochemicals are what give these fruits and vegetables their bright pigment and flavor, and are apart of the plants defense system, just like we have an immune system. The more phytochemicals we consume, the better our body is able to combat oxidative stress, reduce stress induced apoptosis, decrease inflammation, and protect the gut. βž– So what am I getting at? Eat more color! These colors come from vibrant fruits and vegetables which we generally lack in the Standard American Diet (SAD!). By centering your diet around a plant-based diet, you can greatly decrease, or even reverse the development of chronic disease. βž– To make the falafel collard wraps, you will need: • 3 #falafelim falafels, baked (found these frozen @wholefoods, GF, DF, Egg & Nut free) • 2 organic rainbow carrots, shredded • 1 small beet, spiralized • 1 large collard green leaf (to wrap) • 1/2 an avocado, cubes βž– To make the quinoa tabouli, you will need: • 1 1/2 cup cooked quinoa • 2 bunches parsley, finely chopped, stems removed • 1/2 bunch mint, finely chopped • 1 handful cherry tomatoes, diced • 1 small sized shallot, finely chopped • @bragslivefood healthy vinaigrette salad dressing • The juice from one lemon • Sprinkle of Himalayan sea salt βž– To make the maple tahini sauce, you will need: • 1 heaping spoonful tahini • 1 1/2 tsp maple syrup • 1 tsp apple cider vinegar • A squeeze of lemon juice  Add water if need to thin
