It's morning tea time - 1/2cup 100% natural yoghurt (no added sugar or anything for that matter) with Chiara's left over banana, prob 1/2 large banana. This is a great after dinner / I feel like dessert kind of snack instead of reaching for chocolate! It still tastes sweet by adding in your own fruit or even a small sprinkle of muesli on top. Try 1/2 cup frozen mixed berries or some cut up strawberries if you aren't a banana fan. A month ago I gave my word to taking on a vegan way of eating for 6 months to play in the inquire of discovery around what's possible with food; what else is out there. Since then one of the biggest challenges that had come up for me has been finding desserts that work for the commitment that I created. The love child of German chocolate cake, Banana pudding and @haagendazs_us ice cream, I found myself being frustrated, annoyed and in this context of limitation. So I took on doing something about and came across the @minimalistbaker and discovered a recipe for #vegan fudge😍 using all of my favorite ingredients : coconut, peanut butter, maple syrup, cacao and vanilla. This was my first time using dates and I'm happy to report that my craving has been satisfied while honoring my word.
