Chef @zaiyuhasegawa 's focus is highly concentrated tonight, as seen through his eyes and deterministic orchestrations around the kitchen. Not only it is the first time he cooks in Bangkok, but it is also for many high profile attendees, that includes several well-known foodies and celebrities from around the world. Zaiyu said he is very excited, and I told him likewise as it is also exciting for me to experience one of our most favorite chefs' new creations, using our local fresh ingredients, with several constraints and twists in/from one of the world's most renown kitchens of @gaggan_anand. There may be some flaws here and there but it is understandable and acceptable. It is the heart & soul that we received in the show that counts. The heart warming food and people of DEN has transported from Tokyo and came out through the culinary concert tonight for this very special collaboration Gaggan X Den. Thank you Gaggan and Zaiyu for letting us in such a unique experience. Boo! Ghost emoji turns out to be a new style mango with "sticky rice," one of the most well known Thai desserts. Instead of the regular coconut milk sticky rice, Zaiyu chose to differentiate by using tapioca instead. Continue with Den's version of basil pork fried rice. Adhering to the concept of home-cooking, chef Zaiyu has created a home-style fried rice with sweet basil leaves. This is a different take on the fried rice, as in Thai cuisine we often use holy basil rather than sweet basil. These two types of basils offer different fragrant, of which we would use them in different dishes. It was interesting to chef's interpretation of this dish tonight. Den's Somtum! Zaiyu has created one of the fruitiest Somtum (Papaya Salad / ส้มตำ) that I ever had. Somtum represents one of the most traditional Thai dishes in Thai cuisine. No Thai adults that I know of never had Somtum before. Therefore, it is almost inclusive to expect a dish of Somtum here at Den x Gaggan. Served in a banana blossom, Somtum's ingredients today is mainly various kinds of local fruits, including but not limited to papaya, marian plum, longan, mulberry, and red rose apple. Zaiyu and I particularly like marian plum which only available this month of year. Nanbanzuke with Thai sneakhead fish (ปลาช่อน) and local vegetables. This Southern-style traditional fish dish is one of my favorite dishes that I often find at homes. Zaiyu's choice of local sneakhead fish and local vegetables go surprisingly well with the traditional Japanese sauce. DFC! Dentucky Fried Chicken is Zaiyu's play of fried chicken wing, served in a KFC style box. The faces on the box is usually that of Zaiyu's, but can change to your face if you come often enough. This time the face is alternately that of Gaggan, for this special collaboration. The filling also is seasonal and occasional. Tonight, @zaiyuhasegawa made a bowl of Tomyum Goong noodle for us! He's confessed that this is one of his favorite dishes in Thai cuisines. The noodle is the wide type (เส้นใหญ่) and the soup is a filtered Tomyum soup, of which has pronounce accents of Japanese dashi (fish stock), lemongrass, bergamot leaves, red onion, and many other Thai herbs. The prawns are starred, and cooked just perfectly. Zaiyu's unique style of cooking has made this unique Tomyum soup really soothing. One of my most favorite Junmai Ginjo I have had, Eikun Junmai Ginjo from mountainous Shizuoka. "Monaka" is a Japanese sweet, usually has Azuki bean filling. At Den, Monaka is often served at the beginning of the meal, with different interesting fillings depending on the seasons and occasions.
