Can you believe thanksgiving is only 35 days away? If you own a vitamix, why not have something quick you can put together for your guests like this super creamy yet cream-lesssss roasted butternut squash soup! 😋😍 Recipe yields 4-6 cups of soups. ______________________________________________________ ✨✨✨Roasted Butternut Squash Soup ✨ ✨✨ - - ⏹ 1 large butternut squash. It will be about 3lbs. ⏹ 8 cloves of garlic, pressed, crushed or minced. ⏹ 1 teaspoon of Tropics Best USDA - Coconut oil. ⏹ 1 medium yellow onion or white onion chopped ⏹ 1 teaspoon of Sea Salt. ⏹ 1/2 teaspoon of ground Turmeric. ⏹ 1/8 teaspoon of ground nutmeg. ⏹ Freshly ground pepper to taste. ⏹ Freshly ground cumin seed to taste. ⏹ 2 tablespoons of Kerry Gold Butter. ⏹ 1 scoop of Bone Broth protein. @ancientnutr ⏹ 3 cups of water or vegetable broth. - - - 1. Preheat oven to 400 degrees and line a rimmed baking sheet with parchment paper. 2. Cut the butternut squash in half and rub all over the inside about 1/2 teaspoon of coconut oil on each side. Then sprinkle with turmeric, Black pepper, cumin seed and salt. 3. With squash facing down, roast it for about 45 minutes until tender and you see the skin coming out. 4. Set the squash aside for 10 minutes until it’s cool enough to handle, about 10 minutes. You can peel the skin off or use a large spoon to scoop out the butternut squash and discard the skin. 5. Meanwhile, in a medium skillet warm the 2 tablespoons of Kerry gold butter and sauté the onions until it gets golden and add the garlic. Ground pepper to taste. Note: here you can add any other species you would like. I added a little cayenne pepper. 6. Using your high performance vitamix, add the cooked onions and garlic , nutmeg, 1 scoop of the bone broth protein, butternut squash and the water. 7. Secure the lid and select the hot soup choice. Week 1 of clinical placement ✅ I'm happy that I managed to survive my first week as a student dietitian, and I'm even happier that I'm still loving it! Going on placement has reaffirmed my love for dietetic practice and that I'm in the right job!
