Dinner tonight! Roasted veggies and grilled chicken! ❤️ Flatten one breast even in size, add 1 tbsp olive oil, season with favorite seasoning (I like Mrs Dash Salt Free), place on preheated grill with temp 475-500, cook 3-4 minutes each side, then 2 minutes each side. Let rest 5 minutes before serving. Begin by roasting vegetables. Preheat oven to 425°F and line two large baking sheets with parchment paper or aluminum foil. Peel the butternut squash, cut it in half lengthwise, and remove the seeds; chop into 1-inch pieces. Next, chop the about 1¼ container of mushrooms (if needed), 2 onions, and 1 head of broccoli into 1-inch pieces. Last, rinse the green beans and trim the ends. Arrange the butternut squash pieces on one of the baking sheets and drizzle with 1½ tsp. olive oil. Spread the remaining veggies on the other baking sheet and drizzle with 2 tsp. olive oil. Season with salt and pepper, if desired. Place both baking sheets in the oven for 20-30 minutes or until the mixed veggies are lightly caramelized and tender-crisp. Remove the mixed veggies from the oven and set aside to cool. Stir the butternut squash and return it to the oven for an additional 15 minutes, or until the pieces are golden brown, then set aside to cool. I N S T R U C T I O N S ✔️ How I cook my efo-riro. I grate my red bell peppers, scotch bonnet, green bell pepper, and onion. Set it aside.  Wash and cut whatever vegetables (Mustard green leaves, Kale, Spinach or Collard greens) I'll be using. In a bowl of freshly washed and cut vegetables, I add hot boiling water enough to cover up the vegetables then let it sit for 10 to 20 minutes.  While the vegetables is soaking in hot water, I prepare the sauce mixture. 1. Set a medium dry pot on the stove/gas, add palm oil (about 1/4- 1/3 of cup). 2. Once the palm oil is hot add a little bit of vegetable oil to dilute the palm oil. Then wait for about 1 minute.  3. Pour in the peppers I grated, it should make a sizzling sound, if not that means the oil is not hot enough. 4. Cover the pot for about 5-10minutes.  5. Uncover the pot and pour in cut up beef pieces( you can add dried smoked fish , cray fish, cow skin, or any type of meat you want at this point). Cover the pot and let it cook for like 5mins.  6. Open the pot, add 2 cubes of knorr or one table spoon of knorr, 2 teaspoons of ginger, and a little bit of salt to taste.  7. Stir, not too roughly.  8. Add some meat broth/stock. Then let it cook and dry a bit. Reduce the heat/fire/temperature. 9. Check to see if the soaked vegetables is soft, but not too soft then strain/drain the water.  10. Try to squeeze out as much water as you can from the leafy vegetables. 11. Open the pot containing the sauce, add the vegetables then stir from the bottom to the top. You might need to add a little bit more salt, so check to taste if the salt is to your preference.  12. Cover the pot, reduce heat and let it cook for another 5mins. 13. Turn off heat, the soup is R E A D Y‼️😃 14. Be cautious, it will be very hot. This soup can be eaten with almost anything. Rice, swallow I.e.
