👩🏻‍🍳Vegetable Couscous! Was craving lots of vegetables today, and I always feel like couscous is the best method to load up on veggies. This was super easy and could take on any vegetable. I cooked the couscous in water with a flavored vegan bullion cube.  Then sautéed onion, garlic, yellow squash, zucchini, some jalapeño for a little heat, red bell pepper, corn, and finally wilted down some fresh spinach. Added some madras curry, garam masala, paprika and bay leaf and the aroma was 👏. I always have a hard time figuring out what to cook after getting home at 5, going for a run/long walk or hitting the gym and making sure I'm not going to bed on a full stomach. I get bored of plain rice so this #yellow #rice #recipe is a favorite go-to for me. Full of flavor and it goes well with #fish and any veggies of your choice. Dinner time! ❤  Recipe: 3/4 teaspoon ground turmeric, 1/4 teaspoon ground cumin, Pinch cinnamon, 3 cups water, 1 tablespoon coconut oil, 1/2 teaspoon salt. In a pan toast the spices to bring out their flavor, add the coconut oil and rice and toast the rice for a little. Add the water and salt and cook rice as directed (you can really use any rice). Lemon honey saganaki made with cottage cheese - I got this idea when I ate saganaki at a moroccan restaurant. The cheese used traditionally for saganaki is halloumi, graviera or kasseri but I wanted to try this dish with cottage cheese or paneer as its known in India. The lemon and honey provide an element of robustness to the cheese which is very light in flavor. I also added a pinch of smoked paprika for a bit of a kick. This recipe is really quick to whip up and the kids will absolutely love it. You could avoid the mint with the little ones if they are finicky with the greens. The toasted honey pecans give the dish a crunch and the fried mint leaves round it off with crispiness. I used a cast iron skillet but you could just use a frying pan if you don’t have a skillet.
