Another New England rec for y'all! This one comes to you from Landfall, right on Cape Cod. This broiled seafood medley is full of juicy swordfish, scallops, and shrimp that had me like 😍😍😍 You can't go wrong with fresh seafood on the Cape, and Landfall took it above and beyond!
My husband and I make a perfect team in many ways (after 22 years, you better believe it!!!). We both cook but James has developed such a love for cooking over the last few years that he is the primary cook. Therefore my duty has become deciding what we'll have for dinner every night and he then creates whatever I say. Personally I cannot stand to waste food so I look for ways to incorporate food that is already in the kitchen. Last night was a perfect example of my process. I knew we had some incredible sourdough, local scallops, FF&F shiitake (tiny ones perfect for this application), and tomatoes. The only items to be purchased at the store were flat leaf parsley, white wine, garlic, and shallots. @chadwickseafood scallops were sauteed with white wine, butter, shallots, garlic, the shiitake, and local chopped tomatoes. This heavenly mixture (sauce and all) was placed atop a lightly toasted piece of @lafarmbakery farm loaf bread. Garnished with parsley, cooked bacon (that Jim spotted in the fridge when grabbing the butter), and shaved pecorino romano (we normally have some hard cheese on hand). It was so dang good that I almost licked my plate but I didn't have to.
