When the leftovers win. 🙌🏻 Naan + salsa + Tex-Mex cheese + fajita leftovers = 🏆 • If you want the delicious nitty-gritty... • Preheat oven to 400 degrees. Top naan with thin layer of your favorite salsa, followed by shredded cheese (I used a Mexican blend). Cut leftover fajita toppings, like peppers, onion, chicken or steak, into bite size strips and scatter over the top. Bake on the rack or a pizza stone for 6-8 minutes, or until cheese is completely melted. Top with avocado and cilantro. • Prep ahead tip: Assemble up to 24 hours in advance (I made them this morning), store on a baking sheet (between layers of foil if making multiples), and refrigerate until ready to bake.
Sheetpan Fajitas for a crowd. Or a family of four, three times. Served with tortillas tonight, likely on flatbreads tomorrow, and some other way Thursday (salads?). All that matters is dinner is basically covered for the next two nights. 💃🏻🕺🏻 • For these 👆🏻, I tossed 4 sliced bell peppers and 1 large sliced onion in olive oil and Tex-mex seasonings (chili powder, cumin, oregano, paprika, garlic, salt) then spread in an even layer on a sheetpan. Followed suit with 2.5lb chicken breasts cut into 1-inch strips. Baked at 400 for 25 minutes. Sprinkle with cilantro and lime juice. • Prep tips: Slice the veg and chicken up to 3 days in advance.
My dinner was so good tonight I feel bad for everyone who didn’t get to have it! 😂 This is Sheet Pan Steak and Veggies and it was awesome. Parboiled baby potatoes, fresh broccoli, and a nice cut of steak drizzled with a little oil. I kept it simple with a seasoning blend of salt, pepper, dried thyme and then finished it off with some garlic butter. Broiled it for 5-6 minutes per side and it was good to go! MONDAY: Traybake! Easy, easy...exactly what you want on a Monday. Honestly this couldn’t be quicker or simpler! This one is cod with pesto, roasted red pepper, streaky bacon, new potatoes and green beans..all cooked on one baking tray so minimal washing up too. You all know how much I love that! So: Preheat the oven to 180C. Slice your new potatoes in half and roast in the oven in a little oil for 10-15mins. Now add the fish and the green beans and cook for 12mins or until your fish is cooked through. •For the fish simply spread some pesto onto each cod fillet, now add some roasted red pepper mine was from a jar and then wrap with streaky bacon... So simple. Maisie was watching me make this and Said it looked yummy although she didn’t want the red pepper..I reckon this would still be yummy with just the bacon and the pesto so this could easily be a very easy family and kid friendly meal too! Now I didn’t want to mention the weather and our lack of snow 🌨 or the fact Alfie has another temperature 🤒 so instead I’ll leave you with a joke!
