I forgot to post for a few days. Here are some of the delicious things I’ve been eating. . 1. Rice and beans stuffed in an acorn squash with some yummy veg. Nelson made that for me for our Friday night valentines dinner. . 2. Coconut ice cream with raspberries and a piece of chocolate. Valentines dessert. Yum. . 3. Falafel wrap from Press Market. That was amazing. I’m inspired to recreate it. . 4. Quinoa with veg and beans and a peanut sauce. Aka what I’ve been living off of the past few days.

Today I was cooking my meal of green salad, sauteed mushrooms and onions, garlic sweet potatoes, & roasted squash. I pulled the squash out of the oven. And I had planned to use it in a sauce for the mushrooms & sweet potatoes but it looked so cute and stuffable. I immediately started shifting gears. What could I stuff it with? Sweet potatoes seemed redundant. Mushrooms seemed too slippery when sauteed, and too squishy if I were to have pureed them. So salad it was! Haha. I am so amused! I thought I'd share. My meatless meal tonight for #lent is an acorn squash stuffed with quinoa, black beans, corn, tomatoes, onions, garlic, and topped with cheese, shredded lettuce and gobs of plain yogurt (in place of sour cream). All that’s missing is some avocado 🥑 this was so filling and SO good! Kids even ate it all up!!
