Living in a van doesn’t mean that you have to give up the luxuries of living in a house! Due to my love of cooking and baking, I made sure to include an oven in the van and bring along an electric mixer, baking pans, and even a cake turntable. I decided to brighten my cloudy afternoon by making some brown butter cookies with salted almonds, chocolate, and coconut. Or should I say I made some dough, because let’s be honest, they rarely make it into the oven...
In my first day of a seminar class on Wednesday, we were asked as an ice breaker, “what’s your favorite season and why?” As each person went around the room sharing their preference, all of the answers were either fall or spring. Both of these seasons were selected by classmates for obvious reasons - fall foliage, holidays filled with family, crisp air or spring seedlings and flowers, warmth, and sunshine. Once it was my turn to answer I said winter! The only person with this choice in the class. Don’t get me wrong, sometimes I too get sick of the negative 20 degrees that can sweep through and freeze myself and Roxi to the core; however, winter has so much beauty in my eyes. One of my favorite sights is looking up at evergreen trees after a big storm, appearing as though they are going to topple over. One of my favorite sounds is the crunching of snow under my boots, especially after a chilly night. One of my favorite smells is a wood fire stove and aromas of tea, coffee, and hot chocolate. And lastly, one of my favorite activities is of course skiing - specifically after a big storm. But regardless of the snow conditions, somehow the second my feet are in boots and my boots are clipped into skis, smiles appear and not much else matters.
Well, here we go! Swinging into my final semester of college! After an amazing month and a half in Colorado for an internship, today I got back into the groove of school. I am incredibly excited to take advantage of everything college had to offer this last semester, yet eager to embark on new journeys come May! A German proverb says "erstens kommt es anders und zweitens als man denkt".... that means "expect the unexpected" or something like that 🤷♀️ Well, everything changed in just two days and we are kind of confused.... the fact is, I'll be living this vanlifething just with the lil Gipsy from the day after tomorrow on. Without Markus. And I'm not quite sure for how long. To think about is so weird and I'm not really prepared somehow... i80 here we come! Yesterday marked the beginning of my first cross country drive of 2018. After an incredible month between Colorado and Utah, I am in route back to school for my final semester of college (ah crazy)! Thank gosh I was able to talk my best friend into joining me for the 34 hour trek!
We just scrolled through our pictures we made since last june. We took more than 12.000 😱 These two were taken in Portugal. We celebrated a birthday in praia de ingrina. It was a amazing day. In fact, we had a wonderful time in Portugal. Especially with you guys.
