#mealprepsunday#sundaymealprep in full effect! This next week is a very short week for me as I'm heading out to Las Vegas with some awesome gals and guys later in the week. It's going to be a real STRUGGLE trying to stay healthy and keeping up with workouts but I am ready for the challenge! This week: 1) organic beet slaw (shredded raw beets, salt, pepper, organic balsamic vinegar) 2) sautéed organic sugar snap peas 3) organic hard boiled egg white 4) seared, then baked pork tenderloin 5) oven-roasted sweet potato Pork is often hard to use for me because it MUST be cooked thoroughly or risk chance for parasite/virus/bacteria transmission, but it is also often dry when cooked all the way through and if overcooked it's just 😖. This tenderloin came out really well I think! I used the same technique I used for the tri-tip I always make: dry rub, let sit for a few hours and then sear on all sides 1-2 min on a cast-iron pan. Finish off in oven and check temp with a thermometer that it gets to 150 degrees Fahrenheit before removing from the oven and letting it sit (tented with aluminum foil) for at least 10-15 min. I'm so happy this weekend has been rain-free! This morning I did a Zumba STRONG and then a barre3 class, and now I only have W7D3 left to be done with this week...woohoo! I am currently 21 days into my program and am feeling stronger than ever. I have learned a lot of things on my journey, but the greatest thing I have taken away is that it isn't just about how much time you have, it's about the effort and dedication you put into the time that you do have. . . I have also learned that this journey is one that I could not handle on my own. I wouldn't be where I am today (physically and mentally) if it wasn't for an amazing support system. What's better than being a part of a community of people who are there to celebrate you on your good days but are also there to help pick you up on your bad days? . . I am so happy to have found a system that has given me all the tools that I could possibly need to not only be successful in my own health and fitness journey, but to also help others find success in their own. . .
