Chocolate vegan smoothie/milkshake😍 Was craving some chocolate so I mixed this up yesterday. 3 frozen bananas 1-2 cups of almond milk Organic/vegan hot chocolate powder (this drink is high in potassium, iron and calcium) With coconut flakes and chia seeds on top!✨🍫
Now for a not so quick but still fairly easy meal...vegan lasagna... If you've been following us you know lasagna is a staple in our house, and we realized we hadn't made it since we moved. Made with @daiyafoods cheddar and mozzarella style shreds, Trader Joe's Vegan Mozzarella for the middle, @muirglen Organic Portobello Mushroom sauce, seasoned with our own spices and cooked with @beyondmeat beefy crumbles. Always messing with different vegan cheese combos for lasagna, well, because we can. 😎 We also cut up a @pretzilla sausage bun for pretzel garlic bread. 😍 How do you all enjoy your vegan lasagna?? *P.s. yes, I know I am a horrible whistler...
How do I eat every 2-3 hours without spending my whole day in the kitchen!? 👆🏻meal prepping! I don’t portion out my meals for the whole week bc I don’t have that many container or enough space for that, but I cook my quinoa and other carbs (potatoes, pasta, etc.), chop my veggies for breakfast, and lettuce, and cook some broccoli for lunches ✌🏼 I eat all my meals (except breakfast) cold. I made sure I chose meals that would taste good without being heated up, like this taco salad, pasta salad, carrots and hummus, etc. 👉🏻 lastly I make sure to prep my meals for the day if I’m going to work or just going out. There’s nothing worse than being out and about and getting hangry and having to wait hours before you get home and have a meal ready. Do you follow a meal plan!? How do you prep for your day / week?

Buffalo chickn salad using @gardein strips. Easy and quick meal from last week. The second picture is my current list of quick and easy meals. It will probably grow as we go. I also keep a list of meals for the week (I like to plan ahead). I, Joana, recently started working full-time (thankfully). This means that we're balancing meals and prep time with daily work life. You will probably see us eating out more, eating quick and easy homemade meals, but we will still cook meals that take longer on the weekends 😅😓😁 Trying to find ways to reduce cook time on weekdays without it consuming weekend time.
