Holy mother of Mary. First attempt at methi matar malai. Epic. Epic. Win! Fresh methi leaves at the store today meant my first super proper curry - wet paste of onions, cashews, garlic, jalapeño, ginger, cumin & poppy. Fresh dry paste of cinnamon, cardamom, clove & peppercorn. It's. Just. Wow!!! Added paneer, a bit of yogurt and sugar. Served with naan. And wow. Will happily pass along my recipe to fellow Indian food lovers. After I devour this & slip into a food coma.
Spicy Black bean and quinoa blue nachos were very fulfilling for lunch. I crumbled the leftover black bean burgers and seasoned the same way ground beef is seasoned for tacos. Layered the nachos with black bean crumbles, quinoa, dairy-free queso, guacamole, shredded lettuce, red cabbage and carrots. Garnished with black olives, cilantro and a lime wedge.
