We're not above a good stack o' pancakes on a Sunday. Top 'em with fruit, seeds... whatever! Here's our favorite recipe: Combine 2/3 cup of @kingarthurflour pancake mix with 1/3 cup of milk, coconut, soy, or almond and 1 capful of vanilla extract or fresh vanilla. Mix thoroughly to remove lumps and pour 1 tablespoon size on a well greased griddle. Once you begin to see the mixture bubble, flip and cook until golden and fluffy. In a saucepan on medium heat, add 1 cup of fresh blueberries, 1/2 cup of sugar and lemon zest of one lemon. Allow the mixture to reduce until thick and glossy. Remove from heat and pour over pancakes!
