Somehow we lucked out with seats at the chef's table (or the R&D lab, as it was described to us). I admire David Munoz's talent so was curious to try StreetXo, infinitely more accessible than his flagship in Madrid which makes reserving The Fat Duck look like child's play. It was a fun experience, even the task of going to wash my hands felt like something from the Crystal Maze! I thought the food was okay and enjoyed the pigeon more than the 'paella'. Munoz is understandably not using premium ingredients as this is an outpost of his casual offering, but the cooking was still accomplished. The (strangled) pigeon was well grilled on the robata imparting a smokiness that combined well with the sweet achiote sauce. The meat was very tender but there wasn't the purity of game flavour one finds at Bonhams or Hedone. I'm pleased I went but there wasn't enough quality in the ingredients to make this a must visit in London for me.
